In charge of the kitchen, Chef Laurent Mouret favors local products, mostly from the restaurant’s vegetable garden. Seasonality is in the spotlight, and his creations change with the seasons. In the spring, one finds “Beautiful green asparagus and squid, warm shellfish vinaigrette”, in the summer a “Roasted bass steak, eggplant caponata and tomato emulsion” or in the fall a “Lamb bayaldi with thyme, sliced garlic and Espelette chili juice”.
