La Verdoyante

La Verdoyante is among the restaurants in the Gulf of Saint-Tropez that provides a 100% local experience. This Provencal restaurant in Gassin has been run since 1979 by the Mouret family, who perpetuate a friendly atmosphere. In the heart of the countryside, customers enjoy lunch on the large terrace with its panoramic view of the vineyards and the Gulf of Saint-Tropez, offering an exceptional and delightful setting.

In charge of the kitchen, Chef Laurent Mouret favors local products, mostly from the restaurant’s vegetable garden. He likes to combine raw products with aromatic herbs, citrus fruits and other spices and sublimates each dish thanks to a focus on sauces. Seasonality is in the spotlight, and his creations change with the seasons. In the spring, one finds “Beautiful green asparagus and squid, warm shellfish vinaigrette”, in the summer a “Roasted bass steak, eggplant caponata and tomato emulsion” or in the fall a “Lamb bayaldi with thyme, sliced garlic and Espelette chili juice”.
