Seasonality is in the spotlight, and his creations change with the seasons. In the spring, one finds “Beautiful green asparagus and squid, warm shellfish vinaigrette”, in the summer a “Roasted bass steak, eggplant caponata and tomato emulsion” or in the fall a “Lamb bayaldi with thyme, sliced garlic and Espelette chili juice”.
